Homemade Vegan Cupcakes With White Chocolate And Chocolate Mousse! – Recipe

Vegan cupcakes? Fortunately, this is possible and these small decorative cake wonders will convince everyone at your table! The recipe we’re presenting here is no exception. The cakes are made from purely vegetable ingredients and convince vegans and non-vegans alike. The cakes are airy, juicy and with the creamy chocolate mousse, which is generously spread over the small cake, simply sinfully delicious. The recipe is enough for 12 large cupcakes.

What you need for the dough:

250 ml soy or rice milk

1 teaspoon apple cider vinegar

350 g flour

100 g of sugar

2 tbsp starch (potato or corn)

¾ teaspoon baking powder

½ teaspoon baking soda

½ teaspoon salt

80 ml of oil

50 g grated white vegan chocolate

2 teaspoons of vanilla flavor

What you need for the chocolate mousse:

1 pack of firm silken tofu (Asian shop)

60 ml soy milk

1 teaspoon vanilla flavor

350 g vegan white chocolate

Preheat your oven to 150 ° C and line a muffin tin with paper liners. Since the cupcakes are very light, we recommend colorful molds. Stir the vinegar into the soy milk and wait a few minutes. The milk will curdle a little, which will help the baking process. Now mix the soy buttermilk with the sugar, oil, and vanilla in a large bowl.

Now add the flour, baking powder, baking soda, salt, starch, and white chocolate in a tablespoon. Mix the ingredients gently with a wooden spoon – a mixer and mixing for too long does not make the cupcakes airy, but tough. And then stir until there are no more large lumps in the dough.

Now fill the muffin cups up to 2/3 full and slide everything into the oven on the middle rack. Then let the cupcakes bake for 20 minutes. It is important that you be patient for the first 15 minutes and do not open the oven door, otherwise, the small cakes will collapse. When the cupcakes are golden, take them out of the oven and let them cool completely, preferably on a wire rack.

The chocolate mousse preparation

Put all the ingredients except the chocolate in a blender. Mix these together until you have a soft, smooth paste. Then melt the chocolate on low heat in a water bath and then let it cool for a good 5 minutes.

Put the melted chocolate in the blender and mix everything into a wonderful mousse. Put the mixture in a storage container, cover it, and put the chocolate mousse in the refrigerator for 1 hour.

Once the cupcakes and mousse have cooled down, the fun begins! Take a piping bag or similar device with the largest star nozzle you have. Pour the mousse into the bag and sprinkle large swirls on each of the cupcakes. If you don’t have a piping bag, take a large spoon (or ice cream scoop) and pile mountains of chocolate on top of the cupcakes!
