An eggplant pizza has significantly fewer calories than a normal pizza, but is at least as tasty.
The healthy alternative to pizza is ready in just 30 minutes, making it the perfect weekend or after-work snack.
The recipe of small eggplant slices, which are reminiscent of mini pizzas, is very easy and quick to make. Depending on your taste, you can top the eggplant pizza with different toppings – of course also vegetarian or vegan.
1 eggplant, olive oil, tomatoes, salt, pepper, oregano, rosemary, a topping of your choice, cheese
And this is how it works: Preheat the oven to 200 degrees circulating air.
Cut the aubergine into approx. 1 cm thick slices and brush or spray each slice with oil on both sides. Then salt both sides and place on a baking sheet.
Put in the oven for 25 minutes.
Meanwhile, season the tomatoes with salt, pepper, rosemary and oregano. Cut the topping of your choice into small pieces.
Take the aubergines out of the oven, sprinkle with tomato sauce, topping and cheese.
Put everything back in the oven for 10 minutes. The healthy eggplant pizza is ready!
